Chicken Terrine

It has been a long time since I want to cook the Chicken Terrine. On week 6, we as a cosmopoint culinary student semester 4 has been assign to cook the Chicken Terrine and the one that responsible For Chef on Duty (COD) on that day is Syamimi Suhaili and myself. We start our class on 8 am and as usual there is always 2 or 3 of the students coming late to the class. Chef Azmi have warn us that next week there will be no excuses for those who come late again. We enter the class and started our class as usual. We end the class perfectly and the kitchen have been cleaned after used.


Okay, enough about the class. Now I will share about the recipe that we have been assign which is the Chicken Terrine. Terrine can be referred as ‘French Forcemeat’ (mixture of ground meat, lean meat and fat). It is similar to pate where the difference is pate use offal as main ingredients. Terrine is made from coarsely chopped ingredients and it is usually will be serve in cold or room temperature.

Chicken Terrine



Chicken Breast – 500gm (debone and chopped)
Parsley – 1 nos (fine chopped)
Red capsicum – 1 nos (small dice)
Onion – 1 nos (small dice)
White eggs – 2 nos
Spring onion – 1nos (slice)
Garlic – 2 nos (fine chopped)
Salt and pepper
French bread – 3 slices (bake)






Method of preparation:
1.       Mix the parsley, red capsicum, onion. Garlic, spring onion, and white egg in a bowl and add salt and pepper for taste. Mix gradually until it mixed completely.
2.       Next, mix in the chopped breast chicken in the mixed ingredients.
 

3.       Take some aluminium foil and wrap the terrine to form a cylinder shape. Double wrap it to ensure it will not break.

4.       Prepare a hot boil water and put the wrapped terrine in. Wait until it is cooked.

  

5.       Take the terrine out and wait until it is cold then cut it in pieces. You can cut it in shape using your creativity.
6.       . Now you can begin plating and the Terrine is ready to serve. Use the French bread to pair it with the terrine.











 The final product will be look like this!!


 


Yummy!!  So delicious!!!




You can try this recipe and serve it at any event as an appetizer. It is delicious and can be serve to all kind of people.
